General Manager Interview At The Royal Purnama

a one on one chat with Chef Jay this month in his new surroundings beachside at
Pantai Purnama. Welcome to the team!
Recently Chef Jay had an opportunity to join one of Bali’s most anticipated
resort openings for 2015, The Royal
Purnama – art suites and villas, resting beside the glittering black sands
of Pantai Purnama (Full Moon Beach) on Bali’s southeast. The Royal, presents 35
private pool villas and suites, embellished with the brilliance of the local

By applying contempory Balinese cooking methods, served alongside western delights, Chef Jay says his guests at The Royal Purnama do not need to leave the comfort of the resort surroundings to enjoy world class dishes. The menu – which will celebrate the bountiful harvest of the surrounding plantations and the resort’s own vegetable and herb garden (including fresh seafood purchased directly from the village fishermen.)– is an ever-changing list of à la minute creations redrafted as dishes evolve, disappear and return in accordance with seasonal and market availability. We have a motto in my kitchen – nothing from a bottle, nothing from a can, and nothing from a packet!
This East Java-born man grew up in Gresik – Surabaya and completed his
study majoring hospitality management at AKPAR Triatmajaya. He then focused on
the culinary world by joining British Club in Singapore. And since then he
continued his career by working with famous 5 star hotels and restaurants
throughout Indonesia.
Having a wealth of experience at various hotels and restaurants he was
invited to share his culinary knowledge by one of Australian Fishing &
Cooking Show called “River to Reef” in 2013. Unsurprisingly, quite a few guests
have tasted his best delicacies.
When asked about the style of his cuisines, Chef Jay admitted that he preferred to Western Food and Mediterranean Food because his experience had taught him in Singapore to explore the two kinds of cuisine.
However, when asked about Balinese cuisines, Chef Jay raised both thumbs on Balinese cuisines. Typical characteristics of Balinese food were the presence of a variety of spices and seasonings, so the taste and aroma were truly tempting. Some of the famous delicacies were steamed chickens and ducks (betutu), roasted suckling pig, lawar salad and so on.
Chef Jay wants travelers spending holidays in Bali, especially in the area of Gianyar, Ketewel, and Sanur and surrounding areas, to stay at The Royal Purnama for tasting the dishes he had created. “We indeed have the most amazing restaurant and location right on the beach, simply breathtaking. We can also receive orders from in-house guests delivering his fine dishes directly to their suite or villa accompanied by a private Chef and waiter. The delicacies I serve are no less delicious than the cuisines offered by many 5 star restaurants outside the resort,” he promoted.
